Bacon, Egg, and Cheese Breakfast Muffins

Ingredients

1  can whole wheat crescent rolls
3 eggs
1 tablespoon sour cream
4 slices bacon, cooked and crumbled
1/2 cup shredded cheese
1 tablespoon chopped chives
1 tablespoon of salsa
salt and pepper

Directions

1 Preheat the oven to 375.
2 Whisk together the eggs and sour cream. Season with salt and pepper to taste and set aside.
3 Roll out each crescent roll until it is a little bigger then your muffin tin cup. Grease each cup with cooking spray and press the biscuits into each cup. Be sure to push biscuit all the way down and to the sides of the cup.
4 Divide cheese evenly among the biscuit cups.
5 Pour the egg mixture into each cup. Fill ONLY half way! They will look empty but be sure to resist the urge to fill – the biscuits puff and you will have a mess!Bake for 18 min, or until the bisuits are golden and the eggs are set.
6 Sprinkle with the bacon pieces
7 Return to oven and cook 8 minutes
Use a butter knife to loosen from the pan and serve warm.

Ingredients:

Chicken curry
Flour tortillas
Sour cream
Diced tomatoes
Shredded cheese
Shredded lettuce
Taco Bell salsa packets

Directions: Put chicken curry, tomatoes, lettuce, cheese, and sour cream into a warm flour tortilla. Cover it with salsa packets from Taco Bell because that’s how to be a real gourmet.

Ingredients:

10 eggs
Heavy cream
Salt
1 cup salsa
7 corn tortillas
corn
Shredded jack cheese
roasted pork
sour cream
French onion soup mix

Directions:

“Crack ten eggs into a bowl. Add some heavy cream, salt, and half a jar of salsa, and whip it with a beater. Rip seven corn tortillas into scraps the size of a baby’s fist, sauté till golden, and lay about a third of them in an oiled baking dish. Pour in some of the egg stuff, more tortillas, beans, and a fat layer of shredded jack cheese. If all you have is Velveeta, that’s okay — just mash that stuff in there with the back of your cell phone. Add the rest of the tortillas and cheese and cover with remaining eggs. Should you have chorizo lying around, you can put it in on the bean tier. Cook the pie for 45 minutes at 375. While it cooks is an excellent time to drunk-dial. If you are rejected or you get voice mail too many times in a row, do a crossword to keep the mood light until the pie is ready.
